Groundhog Day Pancakes! (Gluten-Free)

DSC_0312You may not know this about me but I LOVE Groundhog Day! I know, weird but I am a nostalgic person and I remember watching the movie Groundhog Day growing up. I decided early on in our marriage that I too, like my mom, would try to make all the holidays fun. Even if it was with a simple breakfast, she always thought of a way to make us smile. These pancakes are an easy way to make your littles or your spouse smile. We even have the no snow and snow variations.

DSC_0315Groundhog Day Pancakes (gluten-free)

  • gluten-free pancake mix (We love Pamela’s Products)
  • 1 banana (for 4 servings)
  • 1/2 C chocolate chips plus 8 extra set aside for ears (We used Enjoy Life)
  • 8 candy eyes (for 4 servings)
  • powdered sugar (optional)
  • brown gluten-free cookie crumbs (optional)

Prepare your pancakes into large 5″ diameter pancakes. Cut out a small hole in the middle the width of your banana. Reserve that cutout pancake for making teeth. In a double boiler or glass bowl over hot water, melt your chocolate chips. Remember to reserve 8 individual chips for ears. Cut the banana into 4 pieces. Using a spatula, smear the banana with melted chocolate. Place it in the hole in the middle of the pancakes. Here is where you can add the eyes an chocolate chip ears or let your kiddos do it. (They love it!) You can also smear extra chocolate onto your pancakes and top with powdered sugar for the snowy variation. To make the dirt around your pancakes, just sprinkle the brown gluten-free cookie crumbs. I made up my favorite Purely Elizabeth gluten-free chocolate chip cookie mix and used that.
